Pay Rate/Range: The budgeted salary range that the University reasonably expects to pay for this position is $20.12 to $23.10/hr. Salary offers are determined based on final candidate qualifications and experience; the budget for the position; and the application of fair, equitable, and consistent pay practices at the University.

Department Marketing Statement:

Brief Summary of Job Duties:
Performs essential daily cleaning and sanitation of kitchen equipment, counters, walls, floors and dining room tables and chairs. Washes pots used for cooking by the kitchen production staff, as well as bowls used to serve food that are too large for the dish machine. Must follow strict safety and sanitation rules to include the use of proper chemicals and high temperatures in the cleaning process. Keeps the dish machine clean and ready for use. Utilizes high pressure cleaner to remove grease from equipment, garbage cans, doors and walls.

Required Qualifications:

  • 1 year Knowledge of safety and sanitation regulations regarding proper cleaning of pots, safe lifting, and ability to train others in this area.
  • Ability to perform essential daily cleaning and sanitation of kitchen equipment and food service areas.
  • Ability to follow strict safety and sanitation rules to include the use of proper chemicals and high temperatures in the cleaning process.

Special Conditions of Employment:

  • Ability to lift up to 50 pounds and work standing for up to 8 hours per day. Work hours/days may vary.

Job Functions and Percentages of Time:

35% Pot Washing

  • Sets up pot washing area and maintains sanitation standards.
  • Organizes dirty pots and pans, washes, sanitizes, and air dries.
  • Places all clean pots and pans in specified storage location. Ensures that the shelves or pans used to hold cleaned pots and pans are clean.
  • Trains new staff on proper washing, handling and storage procedures for all pots.

30% Dish Machine Operation

  • Inspects the dish machine daily.
  • Assembles and starts the machine immediately.
  • Checks prior nights checklist for potential problems.
  • Identifies mechanical problems. Corrects them if possible and notifies managers.
  • Checks temperatures and re-checks frequently especially final rinse. Enters temperatures in log.
  • Takes active measures to correct and prevent low temperatures.
  • Cleans dish machine after the lunch meal hour, from approximately 3 pm - 5 pm daily.
  • Reloads dish machine for dinner meal.

25% Kitchen & Dining Room Maintenance

  • Cleans and maintains kitchen and service square floors.
  • Removes boxes and trash regularly.
  • Keeps areas in front of pass-through warmers and walkways around dish room unobstructed.
  • Keeps refrigerator doors cleaned, and notes refrigerator temperatures in logs.
  • Cleans kitchen drains and notifes a manager if they appear clogged.
  • In dining room, doing one section per day, checks and cleans tables, floor and chairs, especially for gum, stickers and dried on food.
  • Trains assistants if necessary
  • Cleans back dock, building exterior, sidewalks on a rotating schedule basis.

10% Other Duties

  • May be required to participate in heavy cleaning during shut-down periods or slack time. Performs other duties as assigned.
  • Works with the managers to communicate issues about the equipment and storage locations that will help for future planning and improvements.
  • Ensures that safe & sanitary food handling procedures are used in own work and in the work of subordinates.
  • Notifies the manager of broken or unsafe equipment on a timely basis. Keeps assigned work area orderly and clean, including all equipment.
  • Assists other departments whenever possible or as needed to put meals out on time.
